WHAT IS SAUERKRAUT?

Sauerkraut is cabbage & other vegetables that have been lacto-fermented in a salt brine for 3- 6 weeks to develop maximum flavour and through the fermentation process, maximise the growth of beneficial bacteria. Fermentation is an ancient technique used for preserving vegetables and other perishable foods for long periods. Back in time, before the use of fridges/freezers, pasteurisation and canning, fermentation was essential for preserving goods.

WHAT DOES RAW UNPASTEURISED MEAN?

Raw means that the kraut has not been heated in order to pasteurise the product. Pasteurisation kills all of the beneficial bacteria so negates nearly all the goodness of the product. All of our Savvykrauts are wild fermented using traditional simple fermentation techniques that ensure all of our krauts are teaming with live cultures and have incredible depth of flavour.

IS SAVVYKRAUT NATURAL?

Indeed it is! We use the best fresh vegetables, spices and herbs Brighton has to offer. We also use Himalayan salt which we feel gives the best results.

We use no chemicals, preservatives or nasty stuff in the food we make. Just 100% natural ingredients.

DO I NEED TO KEEP MY SAVVYKRAUT IN THE FRIDGE?

As this is is a live culture product we recommend keeping it refrigerated. Don’t worry if you do happen to leave it out of the fridge for a day or two though. All that may occur is that the fermentation process may kick in again and therefore the flavours may intensify.

Always make sure your jar or pouch is fully sealed to avoid air getting in to the kraut which can cause a harmless yeast to form on top. If yeast does start to appear use a spoon to remove it, then push the kraut back under the brine and seal the lid tightly & pop it back in the fridge when you're done.

It is advisable to use a clean fork or spoon in your kraut jar or pouch to avoid the spread of bacteria. :)

WHY DID MY SAUERKRAUT FIZZ & BUBBLE WHEN I OPENED IT?

This is nothing to worry about and is just the result of your live culture kraut getting a bit active. The process of fermentation causes a build up of CO2 so when the lid is opened the gas can cause the kraut to bubble up. Simply give the jar a clean and push your kraut back down under the brine with a clean spoon.

HOW LONG SHOULD MY KRAUT LAST?

Properly kept our krauts last 4 months unopened in the fridge. Once opened we suggest eating within 3-4 weeks.

CAN I GET ADDICTED TO SAVVYKRAUT?

Savvy (my name) is short for Savita which is a name of Indian origins that means

‘Best in the Universe’ so as the creator of the product it seemed a fitting name for a

range of sauerkrauts that are undoubtedly the best in the universe! OBVS Xx
